Inspired by Australia’s bountiful fresh fish, Doodles created the perfect accompaniment, Lemon and Caper Mayonnaise.
The tang of lemon and saltiness of the capers with a touch of parsley is perfect served with grilled fish.
It is also wonderful to spoon over chicken and steamed vegetables.
For a perfect homemade batter, mix 3/4 cup of plain flour with 2 tsp extra virgin olive oil, a tsp salt and 3/4 cup of water. Rest for 1 hour then whip 2 egg whites until stiff and fold into the rest of the batter. Heat some Canola oil in a shallow frypan and when the oil is hot enough, (test with a drop first), dip the fish into the batter and cook until nicely browned.
For perfect oven roasted chips, peel and cut the potato into wedges. Drizzle with Extra Virgin Olive oil, sprinkle with salt and lay onto a baking tray with a sprig of rosemary. Cook in a hot oven, until the chips are brown and slightly crispy. Delicious served with Doodles Creek Lemon and Caper Mayonnaise.
